1 whole pineapple (peeled, cored, and chopped)
1/4 teaspoon of saffron threads
1/4 cup of sugar (or to taste)
1/4 cup of water
1/4 cup of fresh lime juice Ice (as much as you like)

Here's what you do:

  1. In a small saucepan, combine your saffron, sugar, and water. Cook over low heat, stirring occasionally, until the sugar is completely dissolved.
  2. Next, take your blender and puree the pineapple until it's nice and smooth. Strain the puree through a fine-mesh sieve into a pitcher and press on the solids to extract as much juice as possible.
  3. Once that's done, go ahead and stir in your saffron mixture and lime juice. Taste it and adjust the sweetness as needed.
  4. It's now time to serve! Add as much ice as you'd like and garnish with a sprig of mint or a lime wedge if you're feeling fancy.
