How Tariffs on Chinese Caviar Are Reshaping the Market (And What to Do About It)

Over the past decade, China has become the largest exporter of farmed caviar in the world. After the CITES organization banned the harvesting of wild sturgeon, China quickly emerged as a global leader in aquaculture, thanks to its long-standing infrastructure, access to land and water, and experience in large-scale farming. Among its prime offerings have been Kaluga Sturgeon and Beluga, though both are illegal for import into the United States due to their protected status.

To meet global demand, China began producing Kaluga Hybrid, a cross between Huso dauricus (Kaluga) and Acipenser schrenckii. This hybrid quickly gained popularity worldwide for its large pearl size, buttery flavor, and—perhaps most importantly—its extremely affordable price, especially when compared to European and American options.

The New Reality: 95% Tariffs on Chinese Caviar

As of recently, the U.S. has imposed a 95% tariff on Chinese imports, which includes all sturgeon roe and caviar products. Overnight, Chinese caviar—once known for being the budget-friendly option—has become prohibitively expensive.

In response, many traders and distributors have begun stockpiling Chinese caviar ahead of the April 9th tariff enforcement date. That means the quality of product in circulation could be compromised—with some producers resorting to pasteurization to extend shelf life and move aging inventory. This not only affects the freshness and texture of the product, but also its integrity.
